Many of you may know that I have a son with severe food allergies, and a daughter with sensitivities to many of the same allergens as her brother. Just for clarification, let me list what they are, and how severe.
*Eggs, anaphylactic
Soy, severe, he gets hives
*Milk, moderate, he can handle it in small amounts
Peanuts, moderate
Turkey, moderate
Pork, moderate
Barley, mild, worsens exzema
Oats, mild, worsens exzema
Corn, mild, worsens exzema
*Rye, mild, worsens exzema
Fish, previously a severe positive on test, now testing negative, havnt tried it yet
**Wheat, my daughter is sensitive, my son is not
*These are the ones my daughter is sensitive to as well.
Now, obviously because of how many things my son is allergic to, finding things that he can eat are difficult. Most things I can find have additives derived from many of his allergens, and I just don't want to risk it.
I have found many great egg-free recipes online, and I would love to try them out on him. One of the problems is store bought flour. It has barley in it! Did you know that? Besides that, I think that it is over processed, and just has no need to be in my childrens' bodies.
I have read studies where the reaction to many grains is lessened if you soak the grains for 24 hours before using them. I figured I might give that a try! Its the same concept for soaking beans overnight. It reduces the gas you get, because it is easier to digest.
I'd rather make my own flour for my family to use, but it is really difficult. I dont grow wheat, and I dont have a mill. I do have wheat berries and a food processor though.
I am doing an experiment. I am soaking a mixture of wheat berries and lentils for 24 hours. I will then attempt to make egg-free waffles from this, and see how it turns out. Because of my son's allergies, he really does need alternate protein sources. He does fine with whey protein, but again, the additives to the powder, and the fact that its so processed, makes me wary to use it. Im hoping that the lentils are easy for him to digest and dont mess with the flavor of the waffles too much.
